What is the difference between high and low temperature Glue Guns?

I need to buy a Glue Gun for an art project, and I was wondering what the difference is between glue guns that Melt Glue at high or low temperatures. I need to use glue on garbage bags and Plastic Bottles and other things, so will using a glue gun on low temp. prevent the plastic stuff from melting?

The high temp gun, melts the glue at a higher temperature, and burns like mad if you get it on yourself or anything that will melt.

Low temp guns andglue dont get as hot.

However, some temps are better suited for different projects.
